Background
The story
Dr. Anthony Chaffee is an American medical doctor practicing in Australia, with over 25 years of focused research into human nutrition, metabolism, and performance. His work centers on a fundamental premise: that most chronic diseases are driven by inappropriate diet and can be improved, often dramatically, through biologically appropriate nutrition.
Dr. Chaffee began university at just 16 years old, studying Molecular and Cellular Biology with a minor in Chemistry before earning his medical degree from the Royal College of Surgeons in Ireland. Early in his training, a deep interest in cancer biology and human physiology led him to question conventional assumptions about diet, disease, and the role of plant compounds in human health.
Alongside his academic and medical career, Dr. Chaffee was an All-American rugby player who went on to play professionally in both the United States and England, and also trained in mixed martial arts. During this time, he first experimented with a meat-only diet, initially influenced by his studies in cancer biology and plant toxins. Over years of personal experience, he observed significant improvements in strength, recovery, and overall performance — insights that would later shape his clinical work.
After working as a Neurosurgical Registrar at Sir Charles Gairdner Hospital in Perth, Dr. Chaffee transitioned his focus toward metabolic health and chronic disease. He is now the Medical Director and Chief Clinician at Elevate Medical Center, where he treats patients with conditions such as autoimmune disease, obesity, diabetes, and chronic pain using targeted nutritional and lifestyle interventions, alongside conventional medical care when appropriate.
In clinical practice, Dr. Chaffee repeatedly observed patients improving when removing processed foods, carbohydrates, and plant-based irritants from their diet, often after years of unsuccessful standard treatments. These consistent outcomes reinforced his research focus and led to a broader effort to challenge prevailing dietary guidelines.
He is the host of The Plant Free MD podcast, where he interviews physicians, researchers, and thought leaders to examine the evidence surrounding nutrition, chronic disease, and human biology. He also leads the Carnivore Challenge, a structured 90-day program designed to help individuals implement an animal-based diet with education, accountability, and community support.
In addition to his clinical and educational work, Dr. Chaffee has provided medical care in refugee camps in Bangladesh, treating survivors of the Rohingya genocide.
Dr. Chaffee's mission is to provide clear, evidence-based guidance on human nutrition, cut through misinformation, and empower individuals to take control of their health through simple, biologically grounded principles.
